For the past several months, Luke and I have been experimenting with a bold idea that began with a simple goal: reduce waste and make the most of the microgreens we grow. Specifically, the focus has been on capturing the microgreens we produce but don’t sell—those tiny, nutrient-packed plants that would otherwise go unused. What started as a practical solution for sustainability quickly turned into a full-scale creative experiment, pushing us to explore new ways to transform our microgreens into exciting—and delicious—products.

Running a small farm comes with its risks, especially when taking on a project this ambitious. Over the last few months, this endeavor has stretched us financially, physically, and emotionally. And, because of our awesome community, we’ve been able to explore our options, test our crazy ideas, and push the boundaries and potential of microgreens—and now, we think we have a great method for turning what could have been waste into something truly innovative, valuable, and tasty!
